Irish Wagyu Beef + Guinness Beef

  • 2 T Olive Oil

  • 4 lb Chili Pepper Ranch Chuck Roast

  • ¾ tsp salt

  • ¾ tsp pepper

  • 4 cloves garlic

  • 2 small onions

  • 6 slices bacon (cut into ½ inch stripes)

  • 2 T flour

  • 14.9 oz Guinness Beer

  • 4 T tomato paste

  • 3 cups beef broth

  • 3 carrots

  • 2 celery stalks

  • 2 bay leaves

  • 3 springs thyme

  • Cut Chili Pepper Ranch Wagyu Chuck into 2” cubes. Sprinkle with salt and pepper.

  • Heat oil in a heavy based pot over high heat.  Add beef in batches and brown well all over. Remove and set aside.

  • Lower heat to medium and add garlic and onions.  Cook for 3 minutes until softened, then add bacon.

  • Cook until bacon is browned, then stir in carrots and celery.

  • Add flour and stir for 1 minute to cook off the flour.

  • Add Guinness, beef broth and tomato paste.  Mix well and add bay leaves and thyme.

  • Return beef into the pot

  • Cover, lower heat.  Cook 2.5 hours.  Uncover and simmer for 45 minutes until beef falls apart.
