Irish Wagyu Beef + Guinness Beef

2 T Olive Oil

4 lb Chili Pepper Ranch Chuck Roast

¾ tsp salt

¾ tsp pepper
-
4 cloves garlic
-
2 small onions
-
6 slices bacon (cut into ½ inch stripes)

2 T flour
-
14.9 oz Guinness Beer
-
4 T tomato paste
-
3 cups beef broth
-
3 carrots
-
2 celery stalks
-
2 bay leaves
-
3 springs thyme

Cut Chili Pepper Ranch Wagyu Chuck into 2” cubes. Sprinkle with salt and pepper.

Heat oil in a heavy based pot over high heat. Add beef in batches and brown well all over. Remove and set aside.

Lower heat to medium and add garlic and onions. Cook for 3 minutes until softened, then add bacon.

Cook until bacon is browned, then stir in carrots and celery.

Add flour and stir for 1 minute to cook off the flour.

Add Guinness, beef broth and tomato paste. Mix well and add bay leaves and thyme.

Return beef into the pot

Cover, lower heat. Cook 2.5 hours. Uncover and simmer for 45 minutes until beef falls apart.
